Ingredients:
- 3 large overripe bananas
- 0.5 cup neutral oil
- 0.5 cup plain Greek yogurt
- 1 large egg
- 0.5 cup granulated white sugar

- 1 tsp baking soda

- 1 tsp ground cinnamon
- 0.25 tsp ground nutmeg
Instructions:
- Preheat your oven to 375°F and line a muffin tin with paper liners.
- Mash the 3 large overripe bananas in a large bowl until they are mostly smooth.
- Whisk in the 0.5 cup neutral oil, 0.5 cup Greek yogurt, and 1 large egg until combined.
- Add 0.5 cup granulated sugar, 0.25 cup light brown sugar, and 1 tsp vanilla extract, stirring until the mixture looks glossy.
- In a separate bowl, whisk together the 1.5 cups flour, 1 tsp baking soda, 0.5 tsp salt, 1 tsp cinnamon, and 0.25 tsp nutmeg.
- Gently fold the dry ingredients into the wet mixture. Stop as soon as no flour streaks remain to avoid a rubbery texture.
- Divide the batter evenly among the 12 muffin cups, filling them about three quarters full.
- Bake for 20 minutes until the tops are golden and a toothpick comes out clean.
- Remove from the oven and let them rest in the pan for 5 minutes until they are firm enough to move.
- Transfer to a wire rack to cool completely.
