- 0.75 cup (150g) brown sugar, packed

- 1 tsp (5ml) vanilla extract
- 1 cup (225g) mashed overripe bananas
- 8 oz (225g) cream cheese, softened
- 0.25 cup (50g) granulated sugar
- 1 large egg
- 0.5 tsp (2.5ml) vanilla extract
- 0.25 cup (50g) brown sugar
Instructions:
- Whisk the all-purpose flour, baking soda, and salt in a mixing bowl.
- In a separate bowl, beat the melted butter and brown sugar until smooth, then incorporate the eggs, vanilla, and mashed bananas.
- Fold the dry ingredients into the wet ingredients using a spatula until just combined; do not overmix.
- Beat the softened cream cheese and granulated sugar together until velvety and lump-free. Mix in the egg and vanilla on medium speed until pale and fluffy.
- Fill each muffin liner halfway with banana batter, spoon 1 tablespoon of the cream cheese mixture into the center, and top with the remaining batter.
- Use a toothpick to gently swirl the filling in a figure-eight motion.
- Bake at 350°F (175°C) for 18-22 minutes until edges pull slightly from the liner and tops are golden-brown.
