Ingredients:

  • 3 Large Avocados (Firm-ripe)
  • 0.5 cup (60g) All-purpose flour
  • 2 Large Eggs, beaten
  • 1.5 cups (90g) Panko breadcrumbs
  • 1 tsp Smoked Paprika
  • 0.5 tsp Garlic powder
  • 0.5 tsp Sea salt
  • 5g Cooking spray (Avocado or Grapeseed oil)
  • 0.5 cup (120g) Sour cream
  • 1 tbsp Fresh lime juice
  • 1 tsp Lime zest
  • 0.25 tsp Cumin
  • 1 tbsp Fresh cilantro, finely minced
  • 0.25 tsp Salt (for crema)

Instructions:

  1. Preheat your oven to 400°F (200°C) and line your baking sheet with parchment paper. A hot oven is crucial for that immediate sizzle when the fries go in.
  2. Slice the avocados in half, remove the pit, and peel carefully. Cut each half into 4-5 thick wedges until you have uniform slices.
  3. Set up three bowls: 1) Flour , 2) Beaten eggs, 3) Panko mixed with smoked paprika, garlic powder, and sea salt. Dredge each avocado wedge in flour, then egg, then panko, pressing gently to adhere.
  4. Place coated fries on the prepared baking sheet, leaving space between each one. Do not overcrowd the pan.Lightly spray the tops of the fries with the cooking spray.
  5. Bake in the oven for 15 minutes until the crust is golden brown and shatter crisp.
  6. While the fries bake, whisk together sour cream, lime juice, zest, cumin, cilantro, and salt. Let sit for 10 minutes before serving.
