Ingredients:

  • 2 medium zucchini (approx. 450g / 1 lb)
  • 1 tbsp extra virgin olive oil (15ml)
  • 0.5 tsp sea salt
  • 0.5 cup finely grated parmesan cheese (45g)
  • 1 tbsp cornstarch (8g)
  • 1 tsp garlic powder (3g)
  • 0.5 tsp smoked paprika (1.5g)
  • 0.25 tsp cracked black pepper (1g)

Instructions:

  1. Slice the zucchini into 3-inch long sticks (about 1/2 inch thick). Place in a bowl and sprinkle with sea salt. Let sit for 5 minutes to allow moisture to bead on the surface.
  2. Using paper towels, aggressively pat the zucchini sticks dry to remove all surface moisture.
  3. Toss the dried zucchini sticks in the extra virgin olive oil until every side is evenly coated.
  4. In a small container, whisk 1 tbsp cornstarch, 1 tsp garlic powder, 0.5 tsp smoked paprika, and 0.25 tsp black pepper.
  5. Sprinkle the starch mixture over the zucchini and toss. Then add 0.5 cup finely grated parmesan and toss again until a thick crust forms.
  6. Preheat the air fryer to 400°F (200°C). Arrange the zucchini in a single layer in the basket, ensuring they do not overlap.
  7. Air fry at 400°F for 8 to 10 minutes. Cook until the edges are deep golden and sizzling.
  8. Remove the basket and let the fries sit for 2 minutes. Wait until the cheese shell hardens and becomes brittle.
