Ingredients:
- 2 lbs Sweet Potatoes, Garnet or Jewel varieties
- 1.5 tbsp Avocado Oil
- 1 tsp Fine Sea Salt
- 1/2 tsp Smoked Paprika
- 1/2 tsp Garlic Powder
- 1/4 tsp Cracked Black Pepper
Instructions:
- Scrub 2 lbs of sweet potatoes and pat them bone dry.
- Cut into 1/2 inch cubes for the best sweet potato air fryer time and temp balance.
- In a large bowl, whisk together 1.5 tbsp avocado oil, 1 tsp salt, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, and 1/4 tsp pepper.
- Add the potatoes to the bowl and mix thoroughly. Cook until every piece looks glossy and orange.
- Preheat the air fryer to 400°F and let it run for 3 minutes.
- Spread the potatoes in an even layer. Note: If you have a smaller machine, do this in two batches.
- Cook at 400°F for 8 minutes initially.
- Remove the basket and give it a vigorous shake. Shake until the potatoes have flipped and moved.
- Cook for another 7 minutes until the edges are charred and the centers are soft.
- Let them sit in the open basket for 2 minutes before serving. Note: This allows the steam to dissipate so the crust sets.
