Ingredients:
- 1 lb chicken breast, cut into 1-inch cubes
- 4 cups broccoli florets, bite-sized
- 2 tbsp avocado oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1 tsp freshly grated ginger
Instructions:
- Cube your chicken breast into 1 inch pieces. In a large bowl, toss them with 1 tbsp avocado oil, salt, pepper, and garlic powder. Note: Uniform sizes ensure even cooking.
- Toss your broccoli florets in a separate bowl with the remaining 1 tbsp avocado oil and a pinch of salt.
- Whisk the soy sauce, honey, rice vinegar, toasted sesame oil, and grated ginger in a small bowl.
- Preheat the air fryer to 400°F (200°C).
- Place the seasoned chicken bites in the basket in a single layer. Air fry for 5 minutes.
- Open the basket and add the broccoli florets on top and around the chicken. Shake the basket to distribute.
- Air fry for another 5-7 minutes until the chicken is golden brown and broccoli edges are slightly charred.
- Immediately transfer the hot chicken and broccoli into a mixing bowl.
- Pour the sauce over the top and toss quickly until everything is coated in a glossy sheen.
