Ingredients:

  • 2 Large Granny Smith or Honeycrisp apples (Approx. 400g)
  • 1 tbsp (8g) Arrowroot powder or Cornstarch
  • 1 tsp (2g) Ground Ceylon cinnamon
  • 1 tbsp (12g) Granulated monk fruit or Coconut sugar
  • 2 second spray Non-aerosol avocado oil spray
  • 1/2 cup (115g) Plain Greek yogurt
  • 1 tsp (5ml) Maple syrup or honey
  • 0.5 tsp Ground cinnamon
  • 0.25 tsp Pure vanilla extract

Instructions:

  1. Core the 2 Large Granny Smith or Honeycrisp apples and slice them into 1cm thick wedges.
  2. Place the apple slices in a large bowl and sprinkle with 1 tbsp (8g) Arrowroot powder or Cornstarch. Toss until every surface is ghostly white and dry.
  3. Add 1 tsp (2g) Ground Ceylon cinnamon and 1 tbsp (12g) Granulated monk fruit to the bowl. Toss again until the white starch is completely masked by brown spice.
  4. Preheat your air fryer to 400°F (200°C) for 3 minutes. Lightly coat the basket with a 2 second spray Non aerosol avocado oil spray
  5. Arrange the slices in a single layer in the air fryer basket. Air fry for 5 minutes. At the halfway mark (around 2.5 minutes), shake the basket vigorously until you hear the apples clattering like wooden blocks.
  6. Remove the fries from the basket immediately. Let them sit on a wire rack for 60 seconds until the exterior shell hardens.
  7. While the apples rest, whisk together 1/2 cup (115g) Plain Greek yogurt, 1 tsp (5ml) Maple syrup, 0.5 tsp cinnamon, and 0.25 tsp vanilla. Stir until the yogurt is silky and streak free.
  8. Plate the warm fries alongside the cold dip and serve immediately.
