Ingredients:

  • 4 (6-ounce) Cod Fillets
  • 0.5 tsp Sea Salt
  • 0.25 tsp Cracked Black Pepper
  • 3 tbsp Raw Honey
  • 2 tbsp Freshly Squeezed Lemon Juice
  • 1 tbsp Extra Virgin Olive Oil
  • 3 Cloves Garlic, finely minced
  • 1 tsp Soy Sauce
  • 0.5 tsp Dried Oregano

Instructions:

  1. Preheat the oven. Set your oven to 400°F (200°C) and place the rack in the center position.
  2. Prep the baking tray. Line a rimmed baking sheet with parchment paper or a silicone mat.
  3. Dry the fish. Use paper towels to pat the 4 cod fillets completely dry on all sides.
  4. Season the fillets. Sprinkle 0.5 tsp sea salt and 0.25 tsp cracked black pepper evenly over the cod.
  5. Whisk the marinade. In a small bowl, combine 3 tbsp raw honey, 2 tbsp lemon juice, 1 tbsp olive oil, 3 cloves minced garlic, 1 tsp soy sauce, and 0.5 tsp dried oregano.
  6. Coat the cod. Place the fish on the prepared tray and pour the marinade over each fillet.
  7. Bake the fish. Slide the tray into the oven and bake for 12 minutes until the fish is opaque and flakes easily with a fork.
  8. Baste halfway through. Carefully spoon some of the escaping juices back over the fish at the 6 minute mark.
  9. Rest the protein. Remove from the oven and let the cod sit on the tray for 2 minutes.
  10. Final touch. Garnish with fresh lemon slices or a sprinkle of parsley if you want to be fancy.
