Ingredients:
- 4 (6-ounce) Cod Fillets
- 0.5 tsp Sea Salt
- 0.25 tsp Cracked Black Pepper
- 3 tbsp Raw Honey
- 2 tbsp Freshly Squeezed Lemon Juice
- 1 tbsp Extra Virgin Olive Oil
- 3 Cloves Garlic, finely minced
- 1 tsp Soy Sauce
- 0.5 tsp Dried Oregano
Instructions:
- Preheat the oven. Set your oven to 400°F (200°C) and place the rack in the center position.
- Prep the baking tray. Line a rimmed baking sheet with parchment paper or a silicone mat.
- Dry the fish. Use paper towels to pat the 4 cod fillets completely dry on all sides.
- Season the fillets. Sprinkle 0.5 tsp sea salt and 0.25 tsp cracked black pepper evenly over the cod.
- Whisk the marinade. In a small bowl, combine 3 tbsp raw honey, 2 tbsp lemon juice, 1 tbsp olive oil, 3 cloves minced garlic, 1 tsp soy sauce, and 0.5 tsp dried oregano.
- Coat the cod. Place the fish on the prepared tray and pour the marinade over each fillet.
- Bake the fish. Slide the tray into the oven and bake for 12 minutes until the fish is opaque and flakes easily with a fork.
- Baste halfway through. Carefully spoon some of the escaping juices back over the fish at the 6 minute mark.
- Rest the protein. Remove from the oven and let the cod sit on the tray for 2 minutes.
- Final touch. Garnish with fresh lemon slices or a sprinkle of parsley if you want to be fancy.
